Biorsaf Raises €5.2 Million Series A and Acquires Cooki

P101 SGR leads a €5.2M round as Biorsaf acquires Cooki to create a unified food compliance platform

Italian startup Biorsaf has completed a €5.2 million funding round and acquired Cooki, a Bologna-based platform for digital food information management. The operation creates what the companies describe as Italy's first single platform able to digitalise all major processes across the food supply chain, from HACCP compliance to labelling and cost analysis. The round was led by P101 SGR with participation from Maia Ventures, Farming Future and Toscana Next.


Funding Round and Strategic Acquisition

The €5.2 million round was led by P101 SGR through its investment programmes, with support from Maia Ventures and Farming Future, the National Technology Transfer Hub for AgrifoodTech promoted by CDP Venture Capital in collaboration with ToSeed & Partners. Toscana Next, a co-investment vehicle managed by CDP Venture Capital, also participated after supporting Biorsaf's seed phase in November 2024. The resources will finance technological development and commercial expansion following the acquisition of Cooki.

Creating a Unified Compliance Platform

The acquisition brings Cooki's Food Safety System, a database of 35,000 food products, a portfolio of more than 1,000 users, and its development team into the Biorsaf group. Biorsaf's BS-SAFE platform already covers food, workplace, and water safety modules, with more than 10,000 active users in three years. The combined offering targets the HORECA, large-scale retail, and food production sectors with a single digital environment for quality, safety, and operations.

Market Opportunity and Investor Support

Biorsaf estimates that the European compliance market for food, workplace, and water safety is worth more than €50 billion and involves about 24 million businesses, yet digital adoption remains very low. The company sees this fragmentation as a consolidation opportunity, with its platform acting as an AI driven standard for compliance automation. P101 partner Giuseppe Donvito said Biorsaf has the technology, vertical expertise, and regulatory leadership that P101 looks for in regtech investments.

Leadership Perspective on Integration

Biorsaf CEO Marco Papalini said the round and acquisition accelerate the company's growth after three years of building a reference platform for food compliance automation in Italy. Cooki founder Giuseppe Grammatico added that the integration extends simplicity beyond HACCP management to labelling, food cost, stock and recipe management. The companies expect the combined platform to save more than 3,000 euros per user annually while reducing paper use and non-compliance risks.

Customer Continuity and Platform Roadmap

For existing Cooki customers, the service will continue without interruptions, with unchanged access credentials, support contacts and data configurations. Cooki's technology and team will continue product evolution under the Biorsaf group, and no functionality will be discontinued during the transition. The two technologies will run in parallel and be progressively integrated into a single platform over the coming months.

Growth Targets and Expansion Plans

The company plans to grow revenues according to a three year roadmap from 2026 to 2029, supported by integration of the two customer bases. Biorsaf also aims to expand from 40 to 120 employees within eighteen months, hiring across development, customer success and commercial teams. The group intends to extend its HACCP Agent artificial intelligence to quality, safety and operations, with automatic document drafting and further acquisitions in the fragmented market.


The acquisition of Cooki and the €5.2 million round position Biorsaf as a consolidator in Italy's food compliance technology sector. By combining food safety, traceability, labelling and operational management, the group addresses a large but still largely undigitalised market. The operation is expected to support safer food processes, lower costs and a more efficient daily workflow for restaurants, retailers and food producers.
